SALMON WITH POTATO GRATIN
Peel, wash and wipe the potatoes dry, cut them into slices. Place them in a large saucepan, add the crushed garlic, the milk, the cream, season with salt, pepper and nutmeg and cook for approximately 20 minutes. Pour the contents of the pan into a gratin dish and bake for 10 minutes in a hot oven (410F). Meanwhile, boil some water in the bottom of a steaming pan, spread the dill leaves onto the slotted upper part of the steaming pan, lay the salmon fillet cut into 6 pieces and steam for 5 to 6 minutes. Place the salmon pieces directly on the potato gratin and serve immediately.
 
Ingredients
1 fillet good quality Scottish salmon
(about 2 1/4 lb)
2 3/4 lbs potatoes (bintje variety)
2 cups milk
2 cups liquid cream
1 clove garlic
salt, pepper, nutmeg
1 bunch dill

Cooking Time 30 mn
Tip
While the potatoes are boiling, make sure the milk doesn't overflow.
